Cowboy Breakfast Bagel Recipe: A Hearty Start to Your Day
Ingredients
- 2 pieces everything bagels, split and toasted
- 4 large eggs
- 1 cup diced cooked potatoes (or frozen hash browns)
- 1 cup cooked breakfast sausage, crumbled (or diced ham)
- 0.5 cup shredded cheddar cheese
- 0.25 cup diced bell pepper (any color)
- 0.25 tsp smoked paprika
- 1 Prise salt to taste
- 1 Prise pepper to taste
- 1 Prise fresh chives or parsley for garnish
- 1 Prise hot sauce (optional)
Instructions
- In a skillet over medium heat, cook the diced potatoes until golden brown and crispy (about 10-12 minutes). Stir occasionally to ensure even cooking. If using frozen hash browns, follow package directions.
- Add the crumbled sausage (or ham) and diced bell pepper to the skillet, cooking until the bell pepper is tender (about 3-4 minutes).
- In a separate bowl, whisk the eggs and season with smoked paprika, salt, and pepper.
- Push the potato and sausage mixture to the side of the skillet. Pour the eggs into the empty side and scramble until fully cooked and mixed with the other ingredients.
- Sprinkle the shredded cheddar cheese over the egg mixture and allow it to melt for a minute before combining everything together in the skillet.
- Remove from heat.
- To assemble, place a generous portion of the breakfast mixture onto the bottom half of each toasted bagel.
- Top with the other half of the bagel and garnish with chopped chives or parsley.
- Serve warm with a drizzle of hot sauce if desired.
