Ingredients

  • 1 whole fresh pineapple, peeled and cut into spears or rings
  • 1 cup dark chocolate chips
  • 1 tbsp coconut oil (optional for smoother chocolate)
  • 0.25 cup shredded coconut (unsweetened)
  • 0.25 cup crushed nuts (such as pistachios or almonds)
  • 1 pinch sea salt, for sprinkling

Instructions

  1. Prepare the Pineapple: Start by peeling the pineapple and cutting it into your desired shapes—spears or rings work well. Pat them dry with a paper towel to remove excess moisture.
  2. Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
  3. Dip the Pineapple: Grab each pineapple piece and dip it halfway into the melted chocolate, allowing any excess to drip back into the bowl.
  4. Add Toppings: Immediately after dipping, sprinkle the melted chocolate with shredded coconut and crushed nuts while the chocolate is still wet.
  5. Set the Chocolate: Place the chocolate-covered pineapple pieces on a parchment-lined baking sheet. Sprinkle lightly with sea salt for an added flavor punch.
  6. Chill: Transfer the baking sheet to the refrigerator for about 15-20 minutes or until the chocolate has hardened.
  7. Serve: Once set, serve the pineapple pieces on a platter as a refreshing dessert or snack.
