Ingredients

  • 1 pound ground beef (80/20)
  • 0.5 cup breadcrumbs
  • 0.25 cup grated Parmesan cheese
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried Italian herbs
  • 1 Prise salt
  • 1 Prise pepper
  • 1 cup shredded mozzarella cheese
  • 0.5 cup diced bell peppers (red and yellow)
  • 0.25 cup chopped fresh parsley (for garnish)
  • 1 tbsp ketchup (for drizzling)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, Italian herbs, salt, and pepper. Mix until well blended.
  3. Take a handful of the meat mixture (about the size of a golf ball) and flatten it in the palm of your hand.
  4. Place about 1 tablespoon of shredded mozzarella cheese and a few pieces of diced bell peppers in the center of the flattened meat. Fold the edges over the filling and shape it back into a ball. Repeat with the remaining mixture and filling.
  5. Arrange the meatloaf bites on the prepared baking sheet, ensuring they have space between them for even cooking.
  6. Drizzle a small amount of ketchup over each meatloaf bite for added flavor and moisture.
  7. Bake in the preheated oven for 25-30 minutes or until they are cooked through and the internal temperature reaches 160°F (70°C).
  8. Remove from the oven and let them cool for a couple of minutes. Then, transfer the meatloaf bites to a serving platter.
  9. Garnish with chopped fresh parsley before serving.
