Bruschetta Chicken Cutlets: A Flavorful Twist on a Classic Dish
Ingredients
- 4 pieces boneless, skinless chicken cutlets
- 1 cup cherry tomatoes, diced

- 0.25 cup fresh basil, chopped

- 1 cup shredded mozzarella cheese

- 1 pieces fresh basil leaves for garnish
Instructions
- Prepare the Bruschetta Topping: In a mixing bowl, combine the diced cherry tomatoes, red onion, minced garlic, chopped basil, balsamic vinegar, olive oil, salt, pepper, and crushed red pepper flakes. Mix well and set aside to allow the flavors to meld.
- Cook the Chicken: Heat a large skillet over medium-high heat and add a drizzle of olive oil. Season the chicken cutlets with salt and pepper on both sides. Once the skillet is hot, add the chicken cutlets and cook for about 3-4 minutes on each side, or until they are cooked through and golden brown. Remove from the skillet and place on a serving plate.
- Add the Cheese: Sprinkle the shredded mozzarella cheese evenly over the cooked chicken cutlets. Cover the skillet for about 1 minute, or until the cheese is melted and bubbly.
- Assemble: Top each cheesy cutlet generously with the prepared bruschetta mixture.
- Garnish & Serve: Finish with fresh basil leaves for garnish. Serve immediately while the cheese is melty and the bruschetta is fresh.
