Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup heavy cream
  • 0.5 cup powdered sugar
  • 0.5 cup milk chocolate chips
  • 0.25 cup semisweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract, until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake in the preheated oven for 10-12 minutes, or until the edges are golden. Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
  7. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and stir in the powdered sugar until smooth.
  8. Add the milk chocolate chips and semisweet chocolate chips to the cream mixture and stir until melted and fully combined, creating a chocolate ganache.
  9. Once the cookies are completely cooled, spread a spoonful of the ganache on the bottom side of half the cookies. Then sandwich them with the remaining half, bottom sides facing the ganache.
  10. Drizzle any extra ganache on top of the assembled cookies for added flair, and let them set for about 10 minutes before serving.
