Boston Cream Pie Cookies Delightful and Easy Recipe
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 0.5 teaspoon salt
- 1 cup heavy cream
- 0.5 cup powdered sugar
- 0.5 cup milk chocolate chips
- 0.25 cup semisweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract, until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden. Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
- In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and stir in the powdered sugar until smooth.
- Add the milk chocolate chips and semisweet chocolate chips to the cream mixture and stir until melted and fully combined, creating a chocolate ganache.
- Once the cookies are completely cooled, spread a spoonful of the ganache on the bottom side of half the cookies. Then sandwich them with the remaining half, bottom sides facing the ganache.
- Drizzle any extra ganache on top of the assembled cookies for added flair, and let them set for about 10 minutes before serving.
