Ingredients

  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tablespoons sugar
  • 1 cup sparkling water or club soda
  • 0.5 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 Prise Ice cubes
  • 1 Prise Fresh mint leaves for garnish

Instructions

  1. In a small saucepan, combine the mixed berries and sugar over medium heat. Stir gently and simmer for about 5 minutes, until the berries start to break down and release their juices. Remove from heat and let cool slightly.
  2. Strain the berry mixture through a fine mesh sieve to remove seeds, pressing down to extract all the juice. You should have about 0.25 cup of berry syrup. Set aside.
  3. In a medium bowl, whisk together the heavy cream and vanilla extract until it slightly thickens, creating a whipped cream-like texture.
  4. Fill serving glasses with ice cubes about halfway up.
  5. Add 2 tablespoons of the berry syrup into each glass.
  6. Slowly pour sparkling water or club soda over the ice and syrup, filling the glasses to about 0.75 full.
  7. Using a spoon, gently stir to combine the berry syrup with the sparkling water.
  8. Top each drink with a generous dollop of the whipped cream mixture.
  9. Garnish with fresh mint leaves and a few whole berries on top for an extra pop of color.

Adjust sugar to taste and garnish with fresh mint for added flavor.
