BBQ Chicken Salad Tasty and Nutritious Meal Idea
Ingredients
- 2 pieces grilled chicken breasts, sliced
- 4 cups mixed greens (spinach, arugula, and romaine)
- 1 cup cherry tomatoes, halved
- 0.5 cup corn kernels (fresh or canned)
- 0.5 cup red onion, thinly sliced
- 0.5 cup shredded cheddar cheese
- 0.25 cup BBQ sauce
- 1 piece avocado, diced
- 0.25 cup crispy bacon bits (optional)
- 2 tablespoons olive oil
- 1 Prise salt to taste
- 1 Prise pepper to taste
- 1 Prise fresh cilantro for garnish (optional)
Instructions
- Preheat your grill (or stovetop grill pan) to medium-high heat. Season the chicken breasts with a bit of salt and pepper. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (74°C). Remove from the grill and let it rest for a few minutes before slicing.
- In a large salad bowl, combine the mixed greens, cherry tomatoes, corn kernels, red onion, and shredded cheddar cheese. Toss them gently together.
- In a small bowl, mix the BBQ sauce and olive oil to create a dressing. Adjust the taste with salt and pepper as needed.
- Add the sliced grilled chicken and diced avocado to the salad bowl. Drizzle the BBQ dressing over everything, and gently toss to coat all the ingredients evenly.
- If using, sprinkle the crispy bacon bits on top for extra crunch. Garnish with fresh cilantro if desired.
