Ingredients

  • 2 pieces grilled chicken breasts, sliced
  • 4 cups mixed greens (spinach, arugula, and romaine)
  • 1 cup cherry tomatoes, halved
  • 0.5 cup corn kernels (fresh or canned)
  • 0.5 cup red onion, thinly sliced
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup BBQ sauce
  • 1 piece avocado, diced
  • 0.25 cup crispy bacon bits (optional)
  • 2 tablespoons olive oil
  • 1 Prise salt to taste
  • 1 Prise pepper to taste
  • 1 Prise fresh cilantro for garnish (optional)

Instructions

  1. Preheat your grill (or stovetop grill pan) to medium-high heat. Season the chicken breasts with a bit of salt and pepper. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (74°C). Remove from the grill and let it rest for a few minutes before slicing.
  2. In a large salad bowl, combine the mixed greens, cherry tomatoes, corn kernels, red onion, and shredded cheddar cheese. Toss them gently together.
  3. In a small bowl, mix the BBQ sauce and olive oil to create a dressing. Adjust the taste with salt and pepper as needed.
  4. Add the sliced grilled chicken and diced avocado to the salad bowl. Drizzle the BBQ dressing over everything, and gently toss to coat all the ingredients evenly.
  5. If using, sprinkle the crispy bacon bits on top for extra crunch. Garnish with fresh cilantro if desired.
